Whenever I get asked what’s my favorite dessert, I think everyone assumes I’ll say a pastry. But truthfully what I never tire of is ice cream.
And since receiving an ice cream maker as a wedding gift, I’ve played around with my own frozen concoctions. I’ve made everything from dairy-free to cake batter ice creams and my husband has enjoyed eating them all!
But this recipe I’m going to share is one of my favorites. You know that feeling you get when you revisit an old favorite and say “why did I ever stop enjoying this?” That’s how I feel about strawberry ice cream. There’s a lot of pressure to love flavors like chocolate chip cookie dough, and I do, but strawberry is so good!! So without further delay, here is my simple fresh strawberry ice cream recipe.
Ingredients
- 2 cups of fresh strawberries, hulled and sliced
- 1 1/2 cups of milk
- 2 cups of cream
- 1 1/2 cups of granulated sugar
- 2 teaspoons of vanilla extract
Take the sliced strawberries and add 1/2 cup of the sugar, along with the juice of half a lemon. The sugar-lemon combination helps macerate the strawberries and it also helps preserve them for the ice cream. Let the strawberries sit for at least 1 hour in the refrigerator.
In the mixing bowl, combine the milk and remaining cup of sugar. Mix until the sugar dissolves. Add the cream and vanilla to the milk mixture, then strain the strawberry and add the juice to the mixture. Next, mash the strawberries in its own bowl, then add them to the cream milk mixture and stir.
Cover the ice cream mixture and store in the fridge for another 1 hour. Next pull out your ice cream maker and follow its instructions on making ice cream. I usually store my ice cream maker bowl in the freezer, so its ready for whenever I need it.
Once the ice cream is made, allow it to freeze for at least four hours. Then enjoy!
