With the inspiration of my brother and little nephew, I came up with this super easy dessert perfect for any backyard bash! I don’t usually touch a BBQ grill, but I made an exception this time. This is one of the easiest and quickest desserts I’ve ever made and it’s perfect for the 4th of July!
Ingredients
- Pre-made pizza dough
- Fresh peaches
- Frozen or fresh assortment of berries (sweetened if necessary)
- Goat cheese
- Olive oil
- Honey (or you can find a honey goat cheese)
- Powdered sugar
- Ground cinnamon
Prep your BBQ grill. It’s perfect to leave the grill on after making all the hot dogs, ribs, burgers etc. First take the pizza dough and separate portions small enough for individual pizzas. Roll each portion into a ball. Flatten out each ball into a mini pizza crust.
Slice your peaches or other stone fruit into rings and set aside. Take the mixed berries and puree using a blender until you have a thick sauce (think tomato sauce!). Slice/crumble the goat cheese and drizzle with honey, if it isn’t already in the cheese.
Bring your dough and sliced peaches over to the grill. Rub a little olive oil onto each pizza dough crust before placing on the grill. Place the dough on the grill and let cook for no more than two minutes. Grill the sliced peaches until they have great grill marks on one side.
Assemble the pizzas after cooking one side of the dough. Spread the “sauce” or berry puree on the crust on the cooked side. Lay one peach ring on top and then sprinkle with goat cheese.
Place the assembled pizza back on the grill for no more that two minutes. Definitely watch closely to make sure you don’t burn it. Remove from grill and dust with powdered sugar and cinnamon. You can add a little mint for a touch of green!
And tada! You have a delicious grilled dessert that is perfect for all your guests. You can always just cook the dough and allow everyone to assemble their own pizzas at a fruit pizza bar. Feel free to add or substitute your favorite fruits!
