Our apartment building threw a holiday party this past Monday, to which I brought these delicious candy cane flavored French macarons. To me, French macarons are the prettiest of all desserts!
I used my standard French Macaron recipe that I shared earlier and created my own filling and garnish! Ganache is and always will be my favorite filling for French Macarons. The way the macaron shells absorb the flavors (they should sit two days in the fridge before serving if possible) is just amazing. With white chocolate ganache you can add any flavoring you want like rose, orange or peppermint to create delicious macarons.
Here’s the recipe for my Candy Cane White Chocolate Ganache Filling
- Ingredients
- 5 oz of white chocolate
- 5 tbsp of heavy cream
- 1/8 cup of crush candy canes (gives the pink color!)
- Method
- Place white chocolate and crushed candy canes in heatproof bowl and set aside
- Bring the heavy cream to a boil in a small saucepan
- Pour the hot cream over the chocolate and candy canes, allow 1 minute to melt
- Whisk the mixture until very smooth, as few lumps as possible
- Place in the refrigerator covered with plastic wrap, to cool. Do not let it get hard, should still be able to stir
- Pipe a hershey kiss sized amount onto half of the macaron shells
- Sandwich shells together and store in the fridge, at least overnight
*To achieve the candy cane garnish on the macaron shells, simple grind extra candy cane and sprinkle the powder before putting in the oven!
I’m alway making French macarons for various occasions but haven’t made them for Christmas yet. However this year I’m thinking of making one of these!
